Today we wanted to share with you a recipe by Jessica. We hope as you head into fall and back to school season you will feel empowered to try new healthy recipes for your family.
“I love salad rolls with peanut sauce, but it can be a pain and time consuming to roll them and they don’t hold up very well. So I like to make it into a salad. I’ve used zoodles as a base or lettuce depending what I have on hand.” -Jessica
Rice noodles, cooked to package directions
Cooked shrimp, chicken, steak, etc
Carrot (spirailized or grated or just cut small)
Peppers, thinly sliced Finely chopped peanuts
Mango
Avocado
Cucumber, thinly sliced
Edamame
Green onion or red onion
Cilantro
All ingredients are optional to your preference
Peanut Sauce:
1/2 cup peanut butter
3 Tbs cup rice vinegar
3 Tbs soy sauce
2 Tbs honey or maple syrup or brown sugar
1 clove garlic, grated 1-2 inch
grated ginger (store ginger in freezer so you always have fresh ginger on hand)
1 lime, juiced
1 Tbs chillli sauce (adjust or omit depending on spice preference)
1-4 Tbs water to reach desired consistency
